Jill Craig, MS, LDN, CNS
Adjunct Professor
College of Health Sciences
Nutrition Institute

Jill Craig is a Certified Nutrition Specialist with a Master of Science in human nutrition from the University of Bridgeport. Though certified as a nutritionist in Connecticut since 2020, on February 1, 2024, she became the second of two CNSs to ever be licensed in her home state of Ohio. This is a huge milestone as she has worked toward legislative change in the state since 2018.

Jill’s undergraduate education was two-fold: elementary education in the early 80s with a return in 2011 to finish her degree in liberal studies with a redirected focus toward nutrition sciences and foundations in chemistry and microbiology. What happened in between was her marriage to Paul, the birth of their four children, plus a career Christian ministry in Kenya, East Africa, for nearly 20 years.

It was while living in remote regions in the north that Jill, and her family, experienced severe effects of malnutrition. An eventual visit to a doctor in Nairobi led to this "simple" answer to her many maladies: “She needs fresh food – fresh protein, fresh vegetables, fresh fruits.” Once enlightened, Jill’s increased knowledge of nutrition brought them eventual healing.

However, once they came back to live in the U.S. in 2007, their health was once again compromised, this time by a moldy, pest-ridden home they tried to renovate. This led Jill to personally experience the effects of environmental toxins that can damage more than just health. These life experiences, plus her education, has equipped Jill for her current role as a clinical educator for Mosaic Diagnostics (formerly, Great Plains Laboratory) in which she helps practitioners uncover root causes of their patients’ suffering.
